I suggest $200 to $300. You can take cash, and we can change the American dollars to RMB in China. Debit cards also work in China. Check with your Bank. I know Chase Bank's debit card works there. Most of the big department stores and tourist stores take credit card as well.
Don't bring large bills! $1, $5, $10, some $20s will work. When you get change back, be careful of counterfeit money.
My local Northbrook Chase Bank will exchange USD into RMB for me, it will take a week. Since we are not dealing with a lot of cash, exchanging money at the airport once we land will also work.
